We generally think of Maryland when we think of the blue crab. I don’t know why. The blues that are drawn from the crystal clear, constant 72°, fresh, spring-fed waters of the glorious St. Johns River, are among the most pure and delicious “Callinectes sapidus” on God’s green earth. They thrive in water that’s filtered over centuries through the seemingly endless, limestone caverns that make up the Florida Aquifer.

I was graciously rewarded today as I painted. Steamed crabs!  The crabber’s daughter surprised me with a plate of fresh-caught poached perfection. And I mean poached in the delicious way. Complete with The Crabber’s secret “crab-bomb”. Amazing. A day I’ll not soon forget.

And it’s hot for late November.
